Linzer Cookies with HERO Red Currant

- 1 1⁄4 cups of butter (unsalted or salted)
- 2⁄3 cup of sugar
- 2 cups of flour
- 5 tbsp. HERO red currant fruit spread
- 1 3⁄4 cups ground almonds
- 1⁄3 cup confectionary sugar
Mix sugar and butter. Beat until fluffy.
Mix in flour and almonds.
Form the mixture into 2 evenly –sized dough balls.
Refrigerate the mixture for 60 minutes.
After 60 minutes roll out dough ball 1 – thickness of .15 inch. Cut into circles. Base Cookie 1.
Roll out dough ball 2. Cut into circles and then cut small hole in center/top of each. Top Cookie 2.
Preheat oven to 325 degrees.
Bake all circles 12-15 minutes. Let cool for 25 minutes.
Spread the HERO Red Currant Fruit Spread on base cookie 1 (no hole).
Place Top Cookie 2 on top of Base Cookie 1 (allow fruit to ‘peek out’).
Sprinkle confectioners’ sugar on top of each cookie.
Ready to serve.
